The 2007 Ciel du Cheval Vineyard is a blend of 39% Cabernet Sauvignon, 35% Cabernet Franc, 13% Merlot, and 13% Petit Verdot which received the same elevage as the Taptiel bottling. Dark ruby in color with a bouquet of cedar, Asian spices, herbs, incense, cassis, and black currant are followed by a supple-textured wine with loads of spicy fruit, good volume, and enough structure to evolve for 2-3 years. Enjoy this lengthy offering form 2014 to 2027.

2007 Vintage Notes

Two short years ago I touted 2005 as the best vintage I’d ever seen. Had my crystal ball been better, I would have waited! 2007, our second Cara Mia vintage, has the laser focus of 2005 with deeper, purer fruit. 2007 was a season of moderate warmth with few heat spikes. In short, perfect ripening conditions. First harvest from Cara Mia Merlot was September 7th, the same day as 2006. The interesting differences in the 2007 vintage are the significantly lower pHs and brighter acidity in the berries. Stephen Tanzer said of our 2007 vintage “Here, too, the last couple of vintages strike me as the best yet. They definitely show less of the green (cabernet franc-influenced) Bordeaux side and more sweetness of fruit and mass appeal. But I liked the older wines very much as well.”

Super sensuous aromatics of spice and blueberries. Cool, brisk flavors of berries and plums leavened by bright acidity. There are many layers here, waiting to unfold with time in the glass. The finish caresses the palate with deep fruit and very fine grained long tannins. This will age gracefully for a decade or longer.
