| Winery Notes: This rare Deep Rosé of Cabernet Sauvignon is made in the Saigneé style from premium grapes grown in our family’s prized Atlas Peak and Pope Valley vineyards. These vineyards produce an extraordinary deep rosé, rich in color and flavor—the result is a rosé with incredible concentration, structure and acidity from fully mature Napa Valley Cabernet Sauvignon fruit. DESCRIPTION One look at this rosé and the color immediately tells you that this is a wine unlike any other. Made from fully mature Napa Valley Cabernet Sauvignon fruit, the Isabel Mondavi Deep Rosé hails from a complex blend of our prized Cabernet Sauvignon vineyards in Atlas Peak, Rutherford, Wooden Valley, and Howell Mountain. VINTAGE The 2009 vintage in Napa was mild throughout the growing season with minimal frosting in the spring and relatively few hot days in the summer and fall allowing for long slow ripening. Challenges came from late October showers, but patience and careful monitoring of the vineyards allowed us to deftly work around the rains and still harvest at optimum maturity. WINEMAKING Our Cabernet Sauvignon vineyards were hand-picked in multiple passes to harvest the fruit in lots based on ripeness and flavor. After careful hand sorting, de-stemming, and gentle crushing, the juice cold soaks on the skins for four to five days where it picks up the deep color and rich flavors that have become the hallmark of our Deep Rosé prior to saignee’ and fermentation . The juice is then inoculated with a yeast ideally suited for preserving fruit flavors and maintaining freshness. A very long, cold fermentation (10º-13º C) in stainless steel tanks helps preserve the beautiful fruit aromatics. TASTING NOTES Deep pomegranate red color and captivating aromas of strawberry, cranberry and red apple fill the glass. Light weight in the mouth with waves of bright red fruit that roll across the palate. Mouth watering acidity dances on the tongue complementing a juicy finish. SERVING SUGGESTIONS This juicy, mouth watering Deep Rosé pairs well with a wide variety of dishes from spicy Thai cuisine to roasted salmon and Thanksgiving turkey.
